Every day is a holiday! I’m not kidding. There’s National Chocolate Fondue Day, National Sticky Bun Day, National Public Sleeping Day and one of my all-time favorites, National Margarita Day. But today, we’re celebrating National Chili Day. Nothing sounds better than a nice, hot bowl of chili on this 30-degree day.
Spicy Tofu Chili:

Ingredients
1/2 package (7-ounce) House Foods Premium or Organic Tofu Medium-Firm or Soft, drained and crumbled
1 15-ounce can chili beans
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1/3 cup green onions, chopped
1/3 cup fat-free or low-fat cheddar cheese, grated (optional)
Directions
Coat pan with non-stick cooking spray. Over medium-high heat, stir-fry crumbled tofu with beans, garlic and chili powder. Cook uncovered for 7-9 minutes so liquids evaporate and flavors blend. Sprinkle with green onions and shredded cheese (if desired) before serving.
