When your cookout gets rained out, making BBQ meatballs is a great backup plan. If you were planning to grill hamburgers, this is one way to repurpose some of your ingredients.

There are several BBQ meatball recipes. This one is from my Aunt Sue, who has spent her life on a beef cattle ranch in Missouri. Believe me when I say, this is the best version. These BBQ meatballs are an easy, party-friendly dish you bake in the oven. It’s a sweet, savory comfort food your guests will love on a rainy day.


1 lb. ground beef
1/2 cup quick cooking oats
6 oz. sweetened condensed milk
1 cup ketchup
1/4 cup brown sugar
1 tbsp liquid smoke

In a large bowl, combine the ground beef, oats and condensed milk. Mix well with hands. Shape the mixture into large palm-sized meatballs and place in a single layer in a baking dish.

Preheat oven to 350 degrees F.

In a small saucepan over medium heat, stir together the ketchup, brown sugar and liquid smoke. Bring to a simmer, then remove from heat and allow to cool slightly before pouring it over the meatballs.

Bake for 45 minutes.
