We’re all looking for ways to live a healthier lifestyle, especially when a new year rolls around and we start to assess the changes we want to make moving forward. Like many, my weakness is carbohydrates but not the good ones like beans and whole grains; I’m talking about the bad boys: refined grains, baked goods and the occasional soda. It’s a tough battle. When Yahoo! web trend expert Lauren Whitehouse shared that users were searching for healthy carb substitutes, like zucchini, I thought this was the perfect time to start bookmarking some smart recipes for myself to try at home. Here are a few favorites I’m adding to my recipe book, STAT.

From healthy salads and entrees to guilt-free desserts, you’ll be snagging up fresh zucchini from the garden all summer long. [If summer ever gets here, that is.] So, tell me, what’s your favorite way to cook this yummy squash?

    I love to stir fry zucchini in olive oil with mushrooms, onion and a little garlic. I leave it still a bit crispy not over done. I also steam the zucchini andmake a homemade type spagetti sauce with ground beef or sausage, mix in the scooped out center of the zucchini and then refill the shell of the zucchini with the mixture, top with grated cheese or my choice, bread crumbs, and Parmesan cheese and bake for about 30 minutes at 350. We all love it.
    I'm still trying to find the Chocolate Zucchini Cake recipe that was in Sunset in the early 70's as it was my favorite and I lost my copy a number of years ago.

    Ummm….tomatoes…..in frosting…..I'm going to have to try this. I just can't wrap my mind around tomatoes in the frosting!

    I am thrilled, for years my friend made everyone happy with her bounty (nobody in FL has a crop),but MS Lubbock TX figures it out, with these tried & true recipes we R on a roll! I'd give anything for her Zucchini Bread recipe, GINNY where R U now, gosh the best, moist best BLT anyone could imagine!
