Memorial Day Cocktails

I have pretty routine Memorial Day weekends year after year. I like to be by the water, whether it’s on a friend’s boat or at the pool. It doesn’t really matter which one (or both!), but I like to be feet away from some sort of cool-down option with a refreshing cocktail in hand. To me, there’s no better way to kick off summer. Here’s what I’ll be concocting over the break.

America the Blue-tiful

1.5 ounces white rum
1 ounce blue curacao
3 ounces Lemonade Sparkling ICE
fresh berries, for garnish

Combine all ingredients into a blender, and blend on high until mixture becomes slushy. Pour into a chilled glass and garnish with fresh berries.

Ice Pop Sparklers

ice cube tray or ice-pop molds
toothpicks or Popsicle sticks
1 bottle Black Raspberry Sparkling ICE
1 container fresh raspberries, chopped

Fill trays or molds with Sparkling ICE, topping each with a scoop of chopped raspberries. If using ice cube trays, cover trays tightly with tin foil, then poke a Popsicle stick through the foil into each cube. If using an ice-pop maker, place the handle sticks into the molds. Place in the freezer for at least 2 hours or until frozen. This recipe works with any of your favorite Sparkling ICE flavors and fresh fruit.

Spiked Strawberry Lemonade

2 cups water
1/2 cup agave (more to taste)
1 cup fresh lemon juice (approximately 6 lemons)
1 lemon, sliced, for garnish
1 pound cleaned strawberries
16 ounces seltzer, chilled
1 cup citrus flavored vodka

In a medium saucepan, bring 2 cups water and agave to boil over medium-high heat. Reduce to a simmer and cook, stirring occasionally until combined, about 1 minute. Transfer to pitcher and refrigerate for 45 minutes. Add lemon juice and vodka and stir. In a blender, puree strawberries until smooth and pour through mesh sieve into pitcher with lemon syrup, pressing on solids. Stir well to combine. To serve, stir in seltzer and divide among ice-filled glasses. Top with lemon slices.

Memorial Day Cocktails

Recipe: Altaneve

Pomegranate Mint Spritz

2 ounces sweet vermouth
2 ounces Campari
2 ounces Altaneve Prosecco
pomegranate seeds
mint leaves, for garnish
orange slice, for garnish

Mix sweet vermouth, Campari and prosecco and sprinkle in pomegranate seeds. Garnish with mint leaves and seasonal fruits like orange, lemon or lime slices. You can easily mix this up in a punch bowl by increasing the ounces.
