Strawberry Pina Colada Pops

 Spiked Strawberry Pina Colada Pops

Ingredients

3 cups fresh pineapple, cubed
1/3 cup unsweetened coconut milk
1/2 cup water
3 tablespoons sugar
1/3 cup rum
1 cup strawberries, sliced

Instructions

Puree all ingredients (except strawberries) in a blender until smooth. Strain through a fine-mesh sieve and discard solids. Add strawberries, pour into ice-pop molds and freeze for 30 minutes. Insert sticks and continue to freeze overnight. For best results, leave ice pops in the freezer for at least 24 hours.

Blackberry Colada Recipe

Blackberry Colada

Ingredients

2 tablespoons sugar
1 1/4 cups pineapple juice
1/2 cup heavy cream
1 (14 ounce) can coconut milk
2 cups blackberries
1 1/4 cups ice

Instructions

Place all ingredients in a blender and blend until smooth. Pour into a glass and serve.

Mango Colada Recipe

Mango Colada

Ingredients

1 mango (peeled, seeded and cubed)
1 1/4 cups ice
2 tablespoons sugar
1 1/4 cups pineapple juice
1/2 cup heavy cream
1 (14 ounce) can coconut milk
mint, for garnish

Instructions

Place all ingredients in a blender and blend until smooth. Pour into glasses, garnish with mint and serve.

    That's a great selection of recipes to choose and cool your heels from on a hot summer day, but always with my best health interests in mind, I think I'll head straight for the Piña Colada Smoothie — or anything with pineapple for that matter. Just call me the "pineapple express!"
